There is a world of spices, herbs, seasonings and flavors. The world offers a broad spectrum of infinite possibilities to choose from in this world of cuisine and fine dining.

The mind can fairly spin with all the limitless choices you have. Just a tertiary glimpse into the Travel Channel personalities will let you know if you started eating one new dish each day for the rest of your life, you could not properly experience all the world has to offer. So, what is the most powerful ingredient in cooking with all these choices? As I stand and work at my cutting board in my clients’ homes, I have learned exactly what the most powerful ingredient in my cooking truly is.

The most powerful ingredient is respect. The beautiful food I have the privilege to create grows from a respect for the ingredients I work with. Carelessly burn the food and you have an inedible mess. Treat the fresh produce and pristine fish, or chicken or beef with care, tenderness and creativity and you create a memorable meal for someone else. Treating anything with respect means you will take the time and steps needed to do your best work. I still remember certain meals I have made or that have been served to me. That is the power of respect; it brings out the best and enhances the recipient. Two guidelines accompany me into the kitchen: Do not over-season. Do not over-cook. This is my recipe for success in the kitchen.
